Summer Salad
Wow Summer is finally here. Albeit may only last a day!
So in celebration of the sun and warmth we’ve posted up a simple easy gluten free salad. We know that there’s lots of ‘can’t cook/ won’t cook’ newbie coeliacs amongst our readers so we hope that this inspires you to create some simple speedy salads that are more than just lettuce, tomato and cucumber.
1) Top Pic = Goat’s cheese, beetroot, cherry tomatoes plus one avocado, one yellow and one red peppers diced. Fresh basil torn and added on top.
2) Left Pic = broad beans (tinned are fine), red pepper, tuna, tinned sweetcorn or fresh
3) Right Pic = New potatoes - cooked (either in a pan or in a microwave to retain vitamins), with a touch of mayo and fresh chives added whilst still warm for flavour
We avoid doing lots of recipes on our blog as there’s so many great Coeliac bloggers out there that have great ideas and can actually cook - really well. Unlike us. We never liked salad much before being gluten free and dislike it now even more as it’s often the only thing offered as GF when you are out and about. So we hope you like this simple salad. It’s also great with Gluten Free burgers, or Cos lettuce.
